Chana Flour Omelette

Chana flour or Besan is the flour of split brown chickpeas ( Chana Dal ) Chana flour = besan = gram flour . Chickpea flour is ground white chickpeas ( garbanzo) . Chana flour is readily available and used commonly in Indian cuisine.

This is a superhero ingredient in a vegan or vegetarian diet – gluten free, low-carb , high in protein and an all round versatile flour

Basic Batter

  • 1 1/2 cups chana flour
  • 1 cup water
  • Salt

You can play around with seasoning eg garlic , thyme or see below for Indian Pudla.

Pudla – Chana Flour Pancakes / Omelette

  • 1 1/2 cups Chana flour
  • 1 cup of water
  • Salt
  • 1/2 tsp chilli powder
  • 1tsp jeera or ajwain seeds ( cumin or carom )
  • Chopped dhania and spring onion
  • Green chili
  • Grated ginger

Place Chana flour , greens and spices in a bowl .

Slowly pour in water , mixing gradually to avoid any lumps , mix well and allow batter to stand for at least 30 min before frying into pancakes.( can stand up to an hour)

Drizzle oil into hot frying pan , ladle batter and fry gently on both sides

You can adjust batter with a few more drops of water .

Serve hot with green chutney or yoghurt and pickles.

Variations

This batter as is can be eaten plain or made into an omlette

You can change up the spices eg add garam masala

You can get creative add dry /fresh methi or veggies to make a savory pancake ( pictured above)

If making omelette- once batter in pan – top with favorite fillings – fold – crispen on both sides

Enjoyed all day round , weekend breakfast , after school lunch or light dinner.

This has is really a very forgiving batter and so easy to work with . I only suggestion is work with your best non-stick pan , it makes making these a breeze.
