Sunday Tea…Banana Bread

There’s nothing better than unwinding with a cup of Chai on a Sunday afternoon. What is tea time without an accompanying sweet treat. I’m no baker , so I stay clear from finicky , complicated recipes. It’s Banana Bread – so not too much to mess up here.

It’s no wonder why Banana Bread was one of the most baked and searched recipe on Google in Lockdown.There’s nothing fancy about it and we all have that bunch of blackening banana’s calling our name.

Sometimes it’s just one or 2 that lay there for days…so after throwing out dozens I have learnt to stash them in the freezer with good intentions of adding them to stuff at a later stage.

Banana Bread
Hot or cold , buttered or plain … Moreish !

Easy Peasy Banana Bread

  • 3 / 4 medium ripe bananas
    1/2 cup butter, melted
    1/2 cup buttermilk ( or yogurt )
    1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 3/4 cup brown sugar
    1 teaspoons baking powder
    3/4 teaspoon bicarbonate of soda
    1/4 teaspoon salt
    1 1/2 cups all-purpose flour
    1/2 cup chopped nuts ( pecan/walnuts or any nuts you prefer ) chopped

Optional – sprinkle of choc chips

Topping ( gives a yummy touch )

2 Tbsp brown sugar

1 tsp cinnamon

Method

1. Mush bananas, add each ingredient ( from top of list to bottom ) combing mixture after each addition

2. Grease loaf tin and pour batter in , sprinkle topping over

3. Bake at 170 for 1 hour , check at 45min with a skewer

4. Enjoy hot or cold , with butter or without

Toasted with Butter…Mmmm

This is truly an effort less bake and extremely delicious. Delicious as is …Perfect sliced with cold butter or eaten warm with melted better and if you want to push all of the above…toasted with butter until slightly crispy. Try it once and let me know.
