Orient Inspired Veg Sharing Plates

Sharing plates , dips and chopsticks it’s a fun finger supper centered around Asian inspired veggies.

The Sharing Plates:

  • Marrow Katsu with a ginger and soy dipping sauce
  • Broccoli Bites with Siracha Mayo
  • Sticky Gochujang Cauliflower

Marrow Katsu : Katsu is a Japanese term for fried meats that has been coated in Panko i.e. crumbed! I mean who can resist a good crispy fried crumbed anything….this proved so , as my kids are not too fond of marrow but these Marrow Katsu was a win!

Marrow , mushroom , eggplant or tofu make great vessels for a crispy Katsu. It is first dipped in a flour batter then crumbed in Panko.

The Batter :

  • 3 TBSP flour
  • 3 TBSP rice flour ( or corn flour)
  • salt
  • Water
  • Panko for coating
  1. Cut your Marrow in thick slices
  2. Coat the marrow in plain flour. Set aside.
  3. Mix the dry ingredients for the batter in a bowl and gradually add the water to form a smooth batter
  4. Create your ‘production line’ – marrow , batter and Panko
  5. Dip floured marrow into batter then roll in Panko
  6. Once completed you can refrigerate until you ready to fry.
  7. Fry on medium heat until golden and crispy
  8. Best served hot with a dipping sauce.

Soy Dipping Sauce :

  • 1/2 cup Soy Sauce
  • 1/4 cup rice vinegar
  • 2tbsp grated Ginger
  • 1 clove crushed garlic
  • Chopped spring onion about 2 stems
  • Chilli oil to taste
  • 1 tsp honey
  • Dash of sesame oil
  1. Mix all ingredients in a bowl – test for balance in flavors and adjust accordingly.

Broccoli Bites

  • Florets of 1 head of broccoli
  • 4 small marrow
  • 1 carrot
  • 2 small potatoes
  • 1 cup cooked rice
  • 1/2 cup rice flour
  • 1 clove garlic grated
  • Knob ginger grated
  • Salt , pepper and chili
  • Sesame seeds
  • Coriander / any herbs chopped
  • Squeeze of lemon
  1. Steam the 3 veggies slightly until tender
  2. Pulse in food processor to resemble crumbs ( not mush )
  3. Steam and mash 2 potatoes
  4. Combine veggies and potatoes
  5. Add rice and rice flour
  6. Season
  7. Sprinkle sesame seeds
  8. Mix to combine
  9. Refrigerate for 15min
  10. Shape into little tots / logs or roll into ball to form a patty
  11. Pan fry until crispy

Siracha Mayo

  • 1/2 cup your choice of Mayo
  • 2/3 Tbsp Siracha
  • 1 small clove of garlic crushed
  • A squeeze of lemon and a bit of the zest ( a few flicks)
  • Chopped Coriander -optional
  • Pinch of salt
  1. Mix all of the above in a bowl and combine. Add a pinch of salt and test seasoning.

Oven Baked Sticky Cauliflower

You will need the following 3 elements and 3 steps to achieve this easy oven baked delight. First prepare the cauliflower , dip in the batter and bake then later coat in sticky sauce and bake further.

  • 1 head of cauliflower cut into florets
  • 1 Batter – as above with additional spices
  • Gochujang Sticky Sauce

The Batter:

  • 3 TBSP flour
    3 TBSP rice flour ( or corn flour)
  • 1/2 tsp chilli powder
  • 1/2 tsp garlic powder
    salt
    Water

Gochujang Sticky Sauce :

  • 2/3 Tbsp Gochujang paste ( Korean Chilli paste)
  • 2 tbsp Soy Sauce
  • 1 Tbsp Rice Vingar
  • 1 tsp maple syrup
  • 1 garlic clove crushed
  • 1 tbsp grated ginger
  • Toasted sesame seeds
  1. Cut the cauliflower into bite sized florets , wash and set drain
  2. Prepare your batter as above
  3. Preheat the oven between 160-180 celcus
  4. Dip the cauliflower in the batter and line up on oven tray
  5. I greased my oven tray with a bit of oil
  6. Bake for 20min ,flipping them over around midway
  7. Brush each cauliflower with the sticky sauce
  8. Return to the oven and bake for a further 10/15min

Serve hot to enjoy the crispy and stickyness – sprinkle with more sesame seeds while hot.
