I’ve never met a potato I didn’t like …

Try These bright beauties to ease into the week … soft fluffy potatoes braised in ginger, turmeric and coriander powder with onions added later in the cook to caramelise , and spinach tossed in at the last minute.

This can form part of an any weeknight meal or side to any celebration. Accompanied with Roti or masala poori will be moreish or alongside rice and dhal for a full meal .
This is the first of the Simple Supper Series . Easy , wholesome food for anyone to enjoy!
For the Sunshine Potatoes You will need :
- 1 heaped tablespoon Ghee ( or any combination of fat)
- 4 Potatoes- cubed
- 1 teaspoon Cumin seeds
- 1 teaspoon Mustard seeds
- knob of Grated ginger
- 2/3 Green chili
- 3/4 teaspoon Turmeric
- 1 teaspoon Coriander powder
- Sprig Curry leaves
- 1 Sliced onions
- 200g Spinach leaves ( as little or much as you want )

- Cut your potatoes on large cubes , keep covered in water until you ready to cook
- Heat a pan on the stove
- Add ghee to it , then your mustard and cumin seeds , allow then to crackle
- Add your rinsed potatoes , toss in ghee and spices
- Add in the Grated ginger , curry leaves and your green chili .
- Season with salt, turmeric and coriander powder
- Toss all together- allow to fry
- Close the pan with lid allowing the potatoes to cook in the steam . Add a few tablespoons of water gradually to assist the potatoes to steam cook .
- Be careful not to add to much water at once , you don’t want mushy potatoes
- Keep the lid on until potatoes are 3/4 done .
- Now open the lid – allow the water to be completely absorbed
- Then add sliced onions and another green chili
- Cook these until they soften and carmalise ,by this time the potatoes should be ready
- Add your spinach leaves and toss as they wilt in the heat
