
Hara Bara is a veg based kebab / patty . They are a popular Indian snack and street food , it is a potato and green veg based patty.
Can be enjoyed as a Light meal , after school snack or with Chai as part of Festive tea party.
Here’s my take – it’s very much of a wing it Recipe. It’s very forgiving and can be played around with.
- 3 potatoes
- 2 medium sweet potatoes ( optional)
- 2 1/2 cups worth Greens ( peas , green pepper and spinach – green beans can be used too )
- Salt
- 1/2 tsp amchur ( dried mango powder for tartness ) a squeeze of lemon and sprinkle of sugar can also do the trick
- Lemon zest for freshness
- Chopped dhania and mint
- Grated ginger
- Chopped green chilli to taste
- Dry spices ( chili powder, garam masala, dhania – jeera powder)
- 1/4 cup bread crumbs ( or I used Poha – flattened rice )
- 2/3 TB Chana flour or rice flour
- Optional – chopped nuts ( coconut, peanuts and sesame )
- Boil and mash potatoes
- Blanch spinach and thoroughly squeeze all excess water
- In a pan soften your greens to soften and get rid of excess moisture
- Blitz into a paste ( don’t add water as you don’t want green mix runny )
- Add to mashed potatoes
- Season with salt and spices
- Add chopped fresh greens , chilli ginger etc
- Taste
- Make into balls and slightly flatten , top with a cashew .
- Optional- make ball and add the mixed nuts in center, close and form patty , top with nuts
- Once patties completed, drizzle oil in pan , fry until golden on both sides.
- Serve warm with a chutney or lemon ( I served a mayo with mint )
If you are making them for Diwali or a festive occasion , I’d recommend adding the nuts for a special touch.
