
If the amazing color isn’t reason enough to make these…perhaps the healthier ingredients will be. A light meal , snack or a slider they easy to make , delicious and nutritious. Can you imagine them on a platter board next to the Hara Bara , such a feast for the senses.
These are great as they can me made ahead of time before your guests arrive.
You will need:
- 3/4 med Boiled , Grated beetroot
- 2/3 big Mashed potato
- About 1 cup Cooked quinoa
- Small fist dhania and mint ( chopped )
- Salt and pepper
- 1 Chopped green chili
- 1/2 tsp each Dhania and jeera powder
- Inch of grated Ginger
- Squeeze of Lemon
- To the mashed potatoes , add the beets and spices .Bind them together. Refrigerate for a few minutes. Make in small balls – slightly flatten and pan fry to crispen .
- I served it with a salad and a feta and yoghurt dipping sauce ( 1 feta round , 1cup yoghurt, garlic , salt , pepper , rosemary – blitz and add lemon zest)
- Also goes really well with a pesto or green chutney … feast your senses ! Color and taste 🙂
