Seared Halloumi

The superb weather we having officially starts Al fresco Dining for us in SA! I love being outdoors so al fresco dining brings both my loves together. Summer meals are quick and easy but definitely not dull or boring . The fresh ingredients we have available makes for colorful tantalising meals.

This starter or part of a main meal can be done on the grill for those killer seared grill lines ( Griddle pan / braai / barbecue)

The Halloumi :

  • The Halloumi is smothered in a sweet chili sauce , seared on both sides and served on a bed of tomatoes.
  • To the sweet chili I added a bit of garlic and chilli flakes ( ginger also packs a good punch ) . Smear generously on halloumi.
  • Ensure your griddle pan is smoking hot – press halloumi down for a few minutes , sear on both sides .Be careful of the splutter…it can be dangerous business.

The Tomatoes :

  • Cherry Tomatoes or roma can be used – juicy , ripe and bursting with flavour – to be roughly chopped
  • Season your tomatoes – salt , pepper, chili flakes, garlic ( optional) lemon zest and juice ( or another variation Balsamic, basil and olive oil)
  • Tomatoes are friends with so many flavours…Coriander , mint , basil , fennel , thyme , rosemary or dill – you can mix it up .
  • And if its not so Summery in your parts… grilled tomatoes with the hardier herbs are just as amazing !

Simple, fuss free and so delicious. The combinations of Creamy , tangy , sweet and spicy , hot and cold make this a winning dish !
